Triple Smoke Whiskey and Guinness cheese Dip
2 TBSP butter
3 TBSP flour
3/4 cup of Milk
1/2 cup of Guinness dark or amber beer
1/2 tsp whiskey
1 tsp of Triple Smoke Smoked Garlic
1tsp of Triple Smoke Smoked Paprika
3 cups of Aged Gouda shredded/divided
Melt the butter in a saucepan over medium heat. Add the flour and whisk to combine for 1 minute.
Lower the temperature and add the milk. Stir to combine. Add the beer and whiskey and bring to a simmer, whisking for 2 minutes. Stir in the smoked garlic and smoked paprika. Remove from heat and stir in 2 1/2 cups of cheese until melted.
Pour into a bowl and top with remaining 1/2 cup of cheese and dust with additional paprika. Serve with pieces of toasted bread or sourdough bread.
