Directions:

1 head of Cauliflower - cut into pieces

1-2 cloves of garlic

1/4 cup of olive oil

1 small onion, thinly sliced

2 tsp (or to desired taste) of Triple Smoke Prime Rub (click on the link to purchase)

1/4 cup of Sour Cream



1 lemon, for fresh squeezed juice and zest one side

Coarsely chopped parsley ( optional )


Preparation:


Pour water in a medium saucepan (just enough to cover the cauliflower florets). Cover and bring to a boil over high heat, cook until tender (approx 10 minutes). Drain and set aside.



Heat 2 tbsp of Olive Oil in large skillet over medium heat. Add onion, garlic and season with Prime Rub. Cook over medium heat until onion/garlic is translucent, or cook over high heat to make the onion/garlic crispy ( approx 5 minutes).


Transfer Onion mixture to a blender. Add Sour


Cream, squeezed lemon, lemon zest, cauliflower. Add a 2 Tbsp of Olive Oil and blend ( 10 seconds). Do not over-blend.


Cool to room temperature. Eat with Pitas, crackers or veggies or as a topper for a salad.
